Just the chicken breast, red potatoes, asparagus, the herb & garlic marinade, and honey. Don’t let that fool you, the flavors still really pop. It’s enough to make a simply flavorful dish!

How to make one pan chicken and veggies:
- Coat chicken in garlic marinade and lay on baking sheet
- Toss vegetables in marinade and lay on sheet around chicken
- Pour the rest of the marinade over the chicken and veggies
- Pour honey over the chicken
- Sprinkle the chicken and veggies with salt & pepper
- Bake 25-30 minutes
Not much prep involved, and once it’s all in the oven, you don’t have to do anything until it’s all ready!

Ingredients
- 4 boneless skinless chicken breasts
- 4 medium red potatoes quartered
- 8 stalks asparagus trimmed
- 6 ounces herb and garlic marinade such as Lowry's
- 1/4 cup honey
- salt and pepper to taste
Instructions
Preheat oven to 400°F.
In a large bowl, toss the chicken in the marinade, shaking off the excess back into the bowl. Lay the chicken in a single layer on a medium sheet pan.
4 boneless skinless chicken breasts, 6 ounces herb and garlic marinade
Add the vegetables to the marinade and toss to combine. Lay the vegetables in a single layer on either side of the chicken.
4 medium red potatoes, 8 stalks asparagus
Pour the remaining marinade liberally over the chicken and veggies. You can add more as desired.
6 ounces herb and garlic marinade
Pour the honey over chicken.
1/4 cup honey
Season the chicken and veggies with salt and pepper to taste.

Bake for 25-30 minutes, or until chicken is cooked through and veggies are tender.

Notes
Storage: Refrigerate chicken and veggies in an airtight container in the refrigerator for 3 days, or freeze for 3 months.

Hi, thanks for the recipes. Try this instead of the garlic marinade I use Kraft Rustic Italian dressing and cook it the same way or grill everything. Adds great flavor to the chicken and veggies.

When I make meals like this, the potatoes always take longer to cook and the chicken comes out overdone. Any tips on making the potatoes finish faster? How small do you cut them?

I cut my potatoes into quarters, or about 1-inch pieces. You can also keep an eye on the chicken and remove it to a plate, leaving the potatoes to continue cooking for a few minutes longer, or cut the potatoes into even smaller (½-inch) pieces.

Angelina,Not critising you but,if you don’t like sheet pan meals,why did you try this ?? Never had a problem with food not cooking evenly if it is prepared properly..Nothing wrong with this recipe if it followed correctly.
