It’s not summer yet, when it’s intolerable to eat complete meals, but we’ve already started to have breakfast for dinners. Do you have breakfast for lunch or dinner? When we leave winter and comforting foods behind, we often prepare breakfast foods for dinner like these Cheese Stuffed Peppers or Menemen, which is a very tasty egg dish with tomatoes and green peppers and have these in addition to sliced tomatoes and cucumbers, olives, various cheeses, jam or honey, which areTurkish typical breakfast foods. And a newly brewed Turkish black tea is almost a must to complement all these.

No other additions, but I do love innovations in cooking, so I added grated carrot and red bell pepper to give my fritters some color and additional flavors.

This recipe was quick to put together and easy to fry in a pan. It was delicious. I didn't have yogurt, so I used Asian Oyster Sauce.

I have been using this recipe for years. I always use goat cheese instead of feta because it's my favorite. I love it. The family loves it. It's so good with plain yogurt.

Added garlic, cumin, pul biber and black pepper. Also used 1 less egg but added a small amount of natural yoghurt. Delicious!

Good base recipe. Tasted a bit plain. I'd want to add some spices-maybe cumin and pepper? Some garlic and onion? Also found them a bit eggy. Would probably use one less egg next time.

Thanks Michelle for the feedback! Adding cumin would really be nice. The feta cheese I use is so strong, which I'm quite happy with. That's why I don't need any additional flavors, but I'm sure adding green onion and garlic will take these fritters to next level.

Could you use coconut oil to fry with instead of olive oil and still get the same product?

Hi Emily, I've never used coconut oil for frying, so I'm not sure.

FAQs

Why are my fritters not crispy? ›

The most common causes for soggy fritters are too much batter (basic flour and egg batter like used in pancakes will never cook up crispy), and whatever you're frittering leeches too much water when cooking.

How do you make fritters less soggy? ›

The eggs you use need to be small and cold. Larger eggs have more water from the egg white, resulting in wetter batter and sad, soggy fritters. The reason you want a cold egg is because cold liquid helps to slow the development of gluten when liquid and flour are added together, which makes for a better texture!

How do you get fritters to stick together? ›

This happens when there is not enough binder in the mix. I like to use Panko bread crumbs, 2 eggs, and cheese as binders. Fritters can also fall apart if they're stuck to the pan. Make sure to use enough oil, preheat the pan, don't flip too soon or too much, or you can use a non-stick cooking pan.

Why are my vegetable fritters falling apart? ›

If your zucchini fritters are falling apart, it's likely because the batter was too wet or the fritters are sticking to the skillet.

Does baking soda make fritters crispy? ›

Is baking soda or powder best for frying? A pinch of baking soda can help produce crispy fried foods. It reacts with the acid in the batter to create carbon dioxide bubbles. These lead to an airy batter and a crisper, fluffier result.

What is the purpose of the egg in fritters? ›

Egg: When making potato fritters, the egg serves the purpose of binding the dough while adding more taste.

Can I use cornstarch instead of flour for fritters? ›

Ingredients. *I have found that rice flour will yield a batter that fries up light and crisp, while cornstarch will yield a batter with firmer crunch. Both are delicious.

How wet should fritter batter be? ›

Batter consistency is key to good fritters. If too runny, add a touch of extra flour (otherwise fritters soggy inside). If way too thick, add a touch of water. It does come down to how juicy / how well the water was removed from the zucchinis.

Why are my zucchini fritters oily? ›

I love zucchini fritters but there's quite an art to making a decent one. If the mix is too wet, they can be soggy or doughy. Too much oil and they can be greasy. Not enough oil and they won't be crispy (and who doesn't love crispy?).

Why are my zucchini fritters sticking to the pan? ›

If your zucchini fritters are falling apart, it's likely because the fritters are sticking to the skillet or the batter was too wet. Getting the zucchini dry before preparing the batter so the binding agents can hold the fritter together. If you have a non-stick frying pan, opt for that as well.

How do you know when fritters are cooked? ›

Just watch them and make sure they don't get too brown, but cook them long enough to make sure the batter is cooked through, about 2 to 2 1/2 minutes total. Repeat with the remaining batter. Remove the fritters and drain on a paper towel.

Should fritter batter be thick? ›

You want a thick batter for these fritters. If you find it's a little too thin simply add in some more flour. If the batters too thick (can still see flour etc), add a dash of milk. The batter should be thick enough to hold its shape on a tablespoon without pouring off everywhere.

What do you serve with fritters? ›

Fritters can be a great main course or a side dish. Great for breakfast with a fried egg and hot sauce. Or a pair it with a poached egg and hollandaise. Fritters work equally well for dinner with a great side salad, some chicken soup or baked fish.

What is used to coat fruit for fritters? ›

Batter is a simple mixture of flour and water is used to make crepes and pancakes. It is also used to coat fruit for fritters.

Why are my fritters soft? ›

When frying, work in batches and avoid sticking the fritters too close together in the pan. If they are too close, they'll create steam which will make them too soft. Use hot oil! Don't add the fritters to the pan until the oil is nice and hot.

Why are my potato fritters soggy? ›

If your potato fritters are soggy, it's likely because too much liquid remained in your vegetables or the oil and skillet weren't hot enough. A hot skillet with hot oil is how you keep potato pancakes crispy.

What makes frying more crispy? ›

The perfect temperature for frying foods is 375°F (190°C). This temperature provides the ideal combination of heat and oil saturation to achieve a crispy, golden-brown texture. However, some recipes may require higher or lower temperatures depending on the type of food being fried.
