Happy Cinco De Mayo!

No Mojitos today, but these balls will help fill those shoes. Zesty Lime, fresh mint, nuts and seeds and alcohol if you like. Snack on these every day! No Bake, raw, and delicious.

These zesty fresh snack balls are very addictive, especially when fresh as the mint is fresh for the first 2 days. Add less or more mint to taste. These bites are just mildly sweet with just enough dates. Add more sweet to taste.

Made these today and enjoyed them, though I tripled the dates to get them sweet enough for my sweet tooth.

Tasty, but I’m hoping the rum mellows out just a little as they sit. 🙂

how much mint extract would I use if I wanted to extend the shelf life? would I use fresh mint as well as the extract or one or the other?

    Reply

    • Richa

start with 1/4 tsp and add another 1/4 tsp if you need it. mint leaves go bad, so if you eliminate mint leaves then the balls stay fresh longer anyway,

Ooh, I love energy balls, and I love mojitos – what a great idea to put them together! 🙂

These sound way better than traditional mojitos if you ask me. No fear of getting sloppy drunk in public if I overindulge! Judging by how delicious these look, that seems like an inevitability. 😉

Oh. My. Gosh! I’ve never thought of putting a touch of alcohol in energy balls. This is a really festive idea! I might need to include these on a birthday menu I’m planning for a friend. So cool!
