I’m always trying to think of new breakfast ideas to feed my family. We are huge bacon lovers, but are trying to eat healthier and have loved making the switch to turkey bacon.

Jennie-O Turkey Bacon is gluten free, low in sodium and low in calories and fat. You just can’t go wrong.

How to make the recipe:

To make this recipe, I started by spraying a muffin tin with nonstick cooking spray and putting a piece of turkey bacon around the edge of each cup.

Next, I filled each cup with a small circle of bread at the bottom and topped it with an egg, salt and pepper, cheddar cheese and green onions.

After cooking at 375 degrees F for 30 minutes, I pulled them out of the oven and they were ready to eat. It was all I could do to let them finish cooking, because they smelled SO GOOD.

Could I make these with pork bacon instead of Turkey bacon?

You could easily use any bacon for this recipe. However, we highly recommend the turkey bacon for the nutritional benefits.

I also prefer the taste over pork bacon. It tastes more fresh, less heavy, and still has an amazing bacon flavor to it.

You will love it, I promise.

Can you freeze these after they have been cooked?

You could easily freeze these after they have been cooked, and reheat them as needed. We don’t recommend keeping them in the freezer for longer than two weeks.

We also recommend them fresh, because they lose that amazing texture, once they have been frozen and reheated.

FAQs

How do you keep egg cups from sticking to muffin tins? ›

Preheat the oven to 350ºF and grease a non-stick muffin pan (affiliate link). Alternatively, you can use paper liners or silicone liners to prevent sticking. You'll also need a rimmed baking sheet that the muffin pan fits into. (This is important!

Why are my egg muffins soggy? ›

If your egg muffins are soggy, you likely used a lot of veggies with high water content. Next time, saute the veggies before adding them to the egg cups to remove the excess moisture.

Why do my egg muffins stick to the pan? ›

My advice would be if you can to heat the pans up first before spraying with oil and adding eggs, that way the egg won't adhere. If that's not an option then use cake release or butter and flour the pans, spraying oil isn't good enough, you need more of a barrier.

Do eggs stick to silicone muffin cups? ›

Eggs tend to stick, so a liberal coating of non-stick spray like Pam baking spray (olive oil sprays don't often work as well) is helpful. Even better, use parchment liners like these or a silicone muffin pan. The eggs will not stick to either of these.

How do you keep egg cups from falling? ›

Egg muffins sometimes deflate because they were not beaten well enough or have cooled down and lost their structure. To keep your egg muffins from deflating, add a bit of flour and baking soda to your mixture.

Should you grease muffin pans or paper baking cups? ›

You can also use baking cups, which prevent your batter from sticking to the pan. If you'd rather not use vegetable spray and you don't have baking cups on hand, simply use a paper towel or your finger to rub some butter into each cavity. Lightly dust each cavity with flour and shake out any excess.

How do you keep muffins moist and fluffy? ›

If you're hoping to create extra moist muffins or aren't going to eat them for a while, consider using paper liners instead. Paper liners will help keep the moisture inside of the baked goods, allowing the muffins to remain fresher for longer.

What does adding an extra egg do to muffins? ›

If there isn't enough egg, your batter or dough may not be able to hold its structure or could end up overly dry or dense. On the other hand, if there is too much egg, your baked goods could lose their shape due to excess liquid, or have a rubbery (or even overly cakey) texture depending on the recipe.

How do you keep muffins crispy and not soggy? ›

Letting them cool off is important, as hot muffins in an airtight container can produce condensation that causes the muffins to become soggy. Line the bottom of the container or plastic bag with a paper towel before placing the muffins inside in a single layer.

How do you get egg muffins out of the pan? ›

After baking, let the muffins cool for at least 15 minutes. Take a butter knife and run it around the outside of each muffin to loosen it from the tin. When you have done this to all, turn the tin upside down and shake gently. The muffins should come out fairly easily.

Why do my muffins stick to the muffin cups? ›

The amount of fat in the muffin batter affects how easily the baked muffin can be removed from the pan. Lightly spray the bottom of each muffin cup with no-stick cooking spray or use paper or aluminum foil cup liners.

Should you grease muffin pans? ›

Do I have to grease a nonstick muffin pan? The nonstick coating is a game-changer, especially for those muffin tops, but it's still a good idea to grease any baking pan for extra reassurance. You can opt either for a cooking spray (here's our favorite one for baking) or melted butter, applied with a pastry brush.

Do you spray silicone muffin cups before baking? ›

Silicone bakeware is designed to be non-stick, so it is generally not necessary to grease or flour the inside of the pan before baking. However, there are some cases where a light coating of cooking spray or a small amount of butter or oil may be beneficial.

Which is better silicone or metal muffin pan? ›

For this reason, a steel core coated with aluminum (AKA "aluminized steel") is a popular choice. There are also pans made entirely of silicone, which is completely nonstick and can go from oven to fridge or freezer. However, silicone can't conduct heat as well as metal.

Do muffins take longer in silicone cups? ›

Silicone bakeware is considered to bake slightly more quickly than its metal counterpart. However, I have found this to be so minimal it is barely worth taking into account, if at all.

How do you keep egg casserole from sticking? ›

How to Keep Those Eggs from Sticking
  1. Use butter or coconut oil! Before I researched this, I was always coating my pans with cooking spray. ...
  2. Use the right kind of pan. Non-stick pans are not always non-stick and there are some safety concerns about non-stick coating. ...
  3. Get the temperature right.

How do you get baked egg off muffin tins? ›

To remove any baked-on residue on the top of the pan, grab a sturdy pan scraper. Combined with hot, soapy water, it will quickly remove even burnt-on bits. Rinse the pan thoroughly, then dry.

Should muffin cups be greased? ›

Are cupcake liners really needed for cupcakes/muffins? Not really. If you're using liners just to keep cupcakes from sticking to the pan, you could omit them by greasing the cups with shortening or butter, or using a non-stick cooking spray.
