  • Preheat oven to 400 degrees F. Spray a 9 x 13 inch pan, with nonstick cooking spray.
  • Peel all the potatoes, with a potato peeler, then slice them into thin rounds. These should be less than 1/4 inch wide.

  • Lay out your potato slices on the bottom of the pan. Make sure you only do one layer of the sweet potatoes.

FAQs

Should sweet potatoes be soaked before baking? ›

No need to soak them. If they are fresh then there is no need for soaking them. If you soak them the water will be absorbed by the sweet potatoes as they are root part and will soften them faster while being roasted.

Should you poke holes in sweet potatoes before baking? ›

Don't forget to poke: Poking holes in the sweet potatoes is crucial. It allows steam to escape, ensuring the insides become perfectly soft while preventing any oven mishaps from over-pressurized potatoes. Oil evenly: When rubbing oil onto the potatoes, make sure it's evenly distributed.

How do you make sweet potato casserole not watery? ›

Eggs and cream help stabilize the dish and prevent it from becoming too runny (a common complaint with many sweet potato casserole recipes). Make it as smooth or chunky as you like!

How do you know when a sweet potato casserole is done? ›

you should see it firm, but still paste like. Once it bulges and you start to see cracks, it will be overcooked. You don't need anything of those fancy gadgets for casserole! You can grab a potato masher or whisk and mash them up.

Why are my sweet potatoes still hard after baking? ›

If the potato is still firm when squeezed, that means it needs to cook more. Baked sweet potatoes can be stored in an airtight container in the refrigerator for up to 5 days. Reheat for 2 minutes in the microwave, at 400°F in the air fryer for 5 minutes, or at 400°F in the oven for 10 minutes.

Should you soak potatoes in salt or sugar water? ›

Why use salt water for soaking potatoes? There's moisture naturally found in potatoes, and moisture is drawn to higher concentrations of salt. (This is a process called osmosis.) So, if you put the potatoes in a salt water bath, that will help draw out some of their moisture, resulting in crispier fries.

Is it better to wrap sweet potatoes in foil when baking? ›

Wrapping sweet potatoes in foil helps in a few ways. It prevents the exterior of the tuber from drying out and overheating too quickly, which would minimize enzymatic activity; it also results in a more evenly cooked texture.

What goes well with baked sweet potatoes? ›

If you're serving your oven baked sweet potatoes as a side dish, pair them with your favorite protein or vegetarian chili. For a topping, stick to butter, Greek yogurt, or sour cream, or try adding a dollop of cilantro lime dressing, tzatziki, chipotle sauce, pesto, guacamole, or a drizzle of tahini sauce.

Can you overcook sweet potatoes? ›

This may sound tedious, but you'll want to avoid overcooking the sweet potato, which can make it dry on the outside and soggy on the inside.

Why put egg in sweet potato casserole? ›

The egg is the all-important binder in a sweet potato casserole: it enriches and stiffens the mixture without making it heavy. Make sure to cool the mash slightly before adding the egg so it doesn't scramble, and to stir well so there are no streaks of cooked egg white in the finished dish.

What is the sticky liquid from sweet potato? ›

The ooze is actually referred to as "sap." It is made up of sugar and starch combined with the moisture found in the vegetable, and it escapes out of the damage made from the knife. The sap really equals the sweetness. If it's pouring out of your potato, that means it's a sweet and delicious vegetable.

How do you dress up a baked sweet potato? ›

Classic loaded baked sweet potato: Top with cheddar cheese, bacon, sour cream, and/or green onions. Chili baked sweet potato: Top with traditional chili or vegetarian chili, plus cheddar cheese, sour cream, green onions, avocado (or guacamole) and/or sliced jalapeños.

What's the difference between yams and sweet potato casserole? ›

Yams and sweet potatoes differ in flavor and appearance, and they are not related. Sweet potatoes are in the morning glory family, while yams belong to the lily family. Yams aren't as sweet as sweet potatoes, and they are starchier and drier. Their texture and flavor are more similar to potatoes or yuca.

What can I put on sweet potatoes besides butter? ›

Favorite Sweet Potato Toppings:

Maple Syrup, Cinnamon, and Butter – ok, I'm a big fan of savory but this combo is also a favorite! ghee is an excellent (and delicious!) substitute for butter if you need it. Brown Butter, Brown Sugar, Vanilla, and Cinnamon – another sweet variation that never disappoints.

Does soaking sweet potatoes make them softer? ›

Soaking the sweet potatoes removes excess starch, which allows them to crisp up easier. You will want to put them in cold water for at least 30 minutes, but the longer you can go, the better.

Does soaking sweet potatoes in water remove starch? ›

To remove excess starch, place cut sweet potatoes into cold water making sure the cut surfaces are submerged. This step is especially recommended for "kinton" (Japanese-style mashed sweet potato) and other lightly seasoned dishes where a delectable color is desired. Soaking time of about 5 minutes is sufficient.

Should you let sweet potatoes sit in water? ›

When chopping sweet potatoes in advance, make sure to store them in cold water in the refrigerator. That said, if you're cooking sweet potatoes in advance, don't worry about the water. Cooked sweet potatoes do just fine when stored in an airtight container.

How long can sweet potatoes sit in water before cooking? ›

You can peel and cut sweet potatoes and store them in the fridge for up to 24 hours in advance for easier meal prep, according to the Chef John Folse Culinary Institute at Nicholls State University. To do this, place the raw, cut sweet potatoes in a bowl of water — covered — in the fridge to keep them fresh.
